Wanting to run e85 on boosted B series using a Demon 2 but do not know if it is even possible or how would the flex fuel sensor link with the ecu and tune?

that depends on what software you use to control it. there are additional IO pins on the Demon, use one of them, or use an unused input to the ECU itself to read the flex fuel sensor. Then it's as simple as switching maps depending on the signal.

Neptune RTP came with the Demon 2. So the flex fuel signal wire can be wired into one of the extra inputs on a OBD1 honda ECU? And if wired to the Demon 2 how would that work?

open neptune, go to the documentation and read about map switching.
it's all there.

Sorry I'd go deeper in explanation but my neptune install is not handy at the moment.

Also if you plan to run e85 full time, the sensor is sort of useless. unless you're trying to prevent damage from accidental fill ups with normal fuel.
